Jalapeno popper casserole made with Quorn (recipe)

I revised the ruled.me buffalo chicken jalapeno popper casserole recipe (http://www.ruled.me/buffalo-chicken-jalapeno-popper-casserole/) to use Quorn chicken cutlets and make a smaller batch. I think it turned out pretty well! It's delightfully cheesy with a touch of hot from the peppers.
Ingredients:
I let the cutlets thaw and then chopped them up. Sauteed the pepper slightly (hold back a small number of slices), added the adobo sauce and chopped cutlets, and let it cook a little until the cutlets were starting to brown. They will soak up all of the moisture from the peppers and adobo. Meanwhile, I mixed the cheeses (hold back a little cheddar) and salt/spices together (easier at room temperature!) and then added the cooked cutlet/pepper mixture. It was really thick and gloppy at this point. I mashed it into a small casserole dish, sprinkled with the reserved jalapeno slices and cheddar, and popped it into the toaster oven for about 25 minutes at around 325-350, until it was nice and bubble and starting to toast on the top.
The macros are very approximate because I couldn't find adobo sauce in the database, but here they are for the full recipe (I sliced it into 5 pieces for a ~200 calorie meal):
It freezes and reheats well - just cut it up into serving sizes after it's cooled completely, drop them into containers, and freeze. I thawed mine before reheating in the microwave, and it was fine.

Please note, it’s a common (and understandable) misconception that this sub might be only for those who want to be 1200 calories a day. I made /1200isplentyketo because I'm female, short and on keto and thus aiming for a low daily calorie count. Though there are many keto subs I was surprised to find there was no sub that really catered to these needs - and as keto is easily very high calorie (what with all that cheese and bacon) it is very helpful to collate all the low calories versions in one place.
Whether your stats mean you need to eat 1200 calories to lose weight, or you can eat a bit more but still want some low calorie alternatives - this sub is for anybody looking for low calorie keto meal ideas :)

Why do recipes seemingly never want to include meat substitutes like Quorn?

I think I would be representative of many of us here - I enjoy a vegetarian diet which includes a lot of meat substitutes. I know some people prefer not to eat these, or cook purely with vegetables, but for me personally, the meat substitute is the pizazz, the centrepiece, the best part of the dish, much as meat would be for those that eat it. Example; quorn or similar own-brand veggie/vegan mince in a chilli or bolognese sauce, veggie bacon or sausages in a cooked breakfast, chicken pieces or tofu in any sort of curry.
Now, tofu is the exception to this rule, because people do include that in recipes. However, pretty much any recipe I’ve ever seen for something which I would absolutely include fake meat in - such as the above chilli or bolognese examples, never includes anything like that - the recipes are vegetables only. By all means, vegetables are delicious of their own accord, but I never cook like this, I love having my protein equivalent.
I can see two potential reasons for this:
  1. Recipes don’t want to mention any brand (i.e. Quorn), which I can understand, but there would be nothing to stop them saying “frozen soya mince (from your supermarket’s vegetarian isle)” or similar.
  2. They’re not including meat substitutes because they’re assuming people will follow the standard meat-eaters’ recipe and simply substitute.
Now, I know there are some obvious exceptions to this, such as the Quorn cookbook I own, but that is literally made by the brand itself so it’s hardly surprising. The same phenomenon I’ve described is also strangely true in restaurants, you can find veggie or vegan breakfasts everywhere, but why do none of them serve veggie bacon with it (which I personally love)?
I’m actually of the opinion that the rise of veganism has done more for plant-based food in a couple years than vegetarianism has in a couple decades. We’re now seeing way more delicious meat substitute products on shelves AND in restaurants, and this is generally advertised as the vegan option, not the vegetarian one.
What are other people’s thoughts on this?

Can no longer stomach Quorn, has the recipe changed or have I become intolerant?

My gf is vegetarian/semi-vegan and we eat all veggie or vegan meals at home, and have done for the last 3 years, we used to eat plenty of Quorn sausages, chicken nuggets and occasionally some of their other products.
A few months ago I made a curry with their chicken pieces and was awake with terrible stomach pain all night. We assumed it was unrelated. Then a while later we had Quorn nuggets, same pain, bloating, feeling terrible, so we ruled out the Quorn 'chicken' products. Got up the courage to try some sausages we had in the freezer, same reaction.
I've heard of people not getting on with Quorn from the get go, but I never had a problem until recently, has anything changed with the recipe or have my insides decided enough is enough? Has anyone else had the same problem? Other faux-meat products have not elicited the same response, so we still eat those ones.

75g Quorn Nuggets
25g Broccoli, trimmed into florets

10g Minced Garlic

1 Tbsp Vinegar
2 tsp low-sodium Soy Sauce
2 Tbsp Tomato Sauce (sugar-free)

Procedure:
  1. Heat vegetable oil in a pan. Add quorn nuggets and brown slightly on both sides.
  2. Add ginger and chili bean paste. Stir until aromatic.
  3. Add water, vinegar, soy sauce and tomato sauce. Simmer 5 minutes, adding more water as needed.
  4. Stir in broccoli and bell peppers. Simmer for 2 more minutes.
  5. Serve hot.
